Easy Plant-based Mexican Dishes

In honor of Cinco de Mayo, I’m going to have a few margaritas : ) Oh, and post this wrap up of a few favorites that coincide with the Mexican holiday. Note, if you try one thing, make it the chili rellanos. Oh, and the nachos. Yes, I know that’s two things but who’s counting. Certainly not the bartender LOL.

Lentil-stuffed Enchiladas

The first time I had enchiladas stuffed with lentils rather than chicken or beef, I remember thinking there was NO WAY IN HELL that they would taste good, but this one of my all time fav dishes!!
